Elevating the art of sushi with Aussie beef and lamb

Sushi as we know it is commonly prepared with seafood be it tuna, salmon, squid, or prawn.

Add beef or lamb into the picture, and it’s a totally different ball game. Surprisingly, it adds an intriguing new culinary depth to nigiri and sushi rolls.

While Japanese wagyu beef isn’t something new, an executive chef named Chef Cash Fong has discovered the beauty of incorporating Australian beef and lamb across a selection of japanese dishes.

The soft, tender juicy meat pairs perfectly with the sushi rice which makes it a phenomenal combination. For our Muslim readers, fret not as the meat is halal.

At a sushi-making masterclass organised by Meat & Livestock Australia (MLA) in collaboration with Grand Hyatt Kuala Lumpur, Chef Cash demonstrated how to make sushi rolls, onigiri, and inari.

"Aussie beef and lamb serve the best meat for you. Here, I want to say you just need quality meat. By only adding salt and pepper, you can have the best meat ever," he said.

The Singapore Masterchef Award winner also said that in order to truly enjoy delicious meat, one needs to know how to properly cut meat.

"You need to cut accordingly. If you’re wrong, it will have a bad impact on the meat texture," he added.

Meanwhile, the Australian Trade Commissioner for Malaysia and Brunei, Melanie Harris expressed her gratitude that these two countries have enjoyed a flourishing trade relationship, especially in the realm of food and agriculture.
